I got this recipe from a book by Sarah Fragoso “Everyday Paleo”, it’s so yummy, it almost feels illegal. Most of her meals are cooked with coconut oil. (I never really used coconut oil for cooking, just occasionally as a face moisturizer, yum!)
I made this salmon with Yam fries. You can see Yam fries recipe here.

Ingredients
4 garlic cloves(crushed), 2 pinches of sea salt, ground black pepper to taste, 1 tablespoon fresh thyme leaves, 1/2 teaspoon fresh ginger(grated), 2 pinches of cayenne pepper, 2 pinches of cumin, coconut oil, 2 wild – caught salmon fillets.
How to:
- In small bowl mix salt, pepper, thyme leaves, ginger, cayenne pepper, cumin and garlic together. Add coconut oil to make a paste.
- Place salmon fillets skin down and rub the spice mix on top of the fillets.
- Move everything on the large pan and fry covered for about 10 minutes, until it is warm all the way through but still a bit pink in the middle
- Serve with lemon wedges

Why coconut oil:
It has been shown to have lots of health benefits in addition to boosting one’s metabolism. Coconut oil is derived from the flesh of harvested coconuts and contains a large amount of saturated fat. Though coconut oil is full of saturated fat, the fact that most of it is lauric acid makes it heart healthy and very good for cholesterol levels. It’s been known to be a healthier alternative to hydrogenated vegetable oils.
Coconut oil is not only beneficial for your body chemistry, but for your hair, nails and skin as well. It is an excellent alternative to lotions . Coconut oil can also be used as hair conditioner leaving it soft and silky.
